Fukucho Junmaï - Book Nicolas Baumert, Sake, une exception japonaise (in French)
Detailed tasting notes : a clear sake with light silver highlights. The nose is delicate and fresh, immediately evoking flowers and fruit: yellow melon, white peach and pear. On the palate, a powerful bouquet of juicy fruit, herbaceous notes of pine resin and heather, all set against a silky, relatively smooth background. It remains lively and very thirst-quenching, thanks to its good acidity. A remarkably well-balanced Junmai Ginjo. The finish is fresh and long. With a hint of bitterness, it has the liveliness of fruit and pretty notes of citrus zest.
Serving suggestions : enjoy chilled, in a white wine glass, as an aperitif or with dinner. Pair with refined, delicate dishes, raw or cooked fish, shellfish, white meats and fruit desserts.
