

About the brewery : The Kariho de Akita Seishu brewery was founded in 1913 in Akita Prefecture. This region is located in the extreme north-west of the island of Honshu, a mountainous area with very harsh winters and heavy snowfalls. Add to that a lot of great rice and very pure spring water, and you have an ideal environment for producing magnificent sakes. What's special about this brewery is that it uses spring water that is rich in minerals, whereas elsewhere in the region the water is rather soft. This enables them to produce a drier sake with a lively, crisp character. The Kariho brewery in Akita Seishu has retained its traditional brewing methods, such as the use of horizontal presses, with no need for mechanical presses, and has made a speciality of the ancient production method known as "Yamahaï".
Tasting recommendations : This is the Yamahai of the Akita Seichu brewery, which also produces the famous Ginjo Yamato Shizuku. There are a number of similarities with the ginjo: tension and minerality that add a great deal of freshness.
