About the brewery : Since 1910, Nadagiku Shuzo has been based in the town of Himeji, in Hyogo Prefecture, a place made famous by its white egret-like castle, but also, in the world of sake, by the exceptional quality of the rice produced there. Descended from the Kawaishi Alcohol Limited, the Kawashi family is a sake brewer, restaurateur and centre of interest for anyone wanting to find out more about sake, welcoming over 100,000 visitors every year. Production is handled by Misa Kawaishi, the youngest of the current owner's three daughters and one of only three women in Japan to belong to the Nambu Toji school. She is assisted by three kurabito. In just a few decades, Nadagiku Shuzo has gone from mass production to a tiny unit of just 200 goku (36,000 litres/year). The sakes are made using only local Hyogo rice, with an average semibuai of 59%, so the focus is almost exclusively on the ginjo category.
