Fermentation is done by natural yeasts and according to essentially manual work. Fermentations are long, twice as long as for a classic sake. The result is uncompromising, a rustic sake, a tempered character and above all, an excellent candidate for hot sake.

About the brewery : Established in 1865 and located in Tottori, a region renowned for its mountains and high-quality water, the Umetsu Shuzo brewery benefits from unique climatic conditions that are reflected in the quality of its sake. Since 2002, this sake brewery has been the sole producer of Umesake no Kyo, which combines the power of "ume no kyo" fruit with the complexity of a traditional sake.

Detailed tasting notes : Umesake no Kyo's dark, coppery color evokes a syrupy texture. Its rustic, powerful character is evident in both smell and taste, revealing a smooth mouthfeel with nuances of soy sauce, hazelnut, mushroom and chestnut.

Serving suggestions : This sake goes perfectly with a wide variety of dishes. Sushi and sashimi highlight the complexity of its flavors, while teriyaki dishes, whether based on chicken, beef or fish, go well with the soy sauce notes. Mushroom-based dishes, such as risotto or miso soup, complement the mushroom aromas. Its richness on the palate also blends harmoniously with seafood such as shrimps or scallops. Similarly, grilled meats, topped with soy sauce, accentuate the distinctive power of this beverage.
