KIKUHIME – ISHIKAWA PREFECTURE
Founded around 1570, Kikuhime Brewery is one of the oldest in Ishikawa. Located in Hakusan, it embodies a demanding artisanal tradition. Kikuhime stands out for its commitment to controlling every step of production, notably the rice polishing, which is done in-house—a rarity in the sake world. The brewery favors deep and structured sakes, often aged, with aromas of nuts, grains, and caramel. It uses very little activated charcoal filtration, thus preserving the natural color and, most importantly, the authentic flavors of the sake. This approach reflects a philosophy focused on sustainability and respect for the product. Kikuhime is also linked to master brewer Naohiko Noguchi, an iconic figure in the sake world, who worked there before founding his own institute. The brewery remains faithful to a timeless and artisanal vision of Japanese sake.
