About the brewery : Senkin is a local brewery dating back to 1806. However, the two young Usui brothers have totally transformed the post-war heritage of their ancestors. They have drastically reduced production volume and returned to traditional production methods, while retaining a certain modernity in the final product. Motivated by the idea of shaking up codes, they wanted to develop their own formula for sake that was both sweet and sour.
Detailed tasting notes : A sake with a fruity, exuberant nose, soft on the palate, a sweetness remarkably balanced by acidity. The sensation of sweetness is long-lasting and, interestingly, Senkin Kimoto evolves towards greater precision, tension, minerality and vivacity.
