About the author : Yoko Yamamoto, a native of Sakaiminato, the town associated with the yôkai (supernatural creatures) of Kitarô, is a specialist in Japanese cuisine and a food journalist. She is editor-in-chief of a magazine that explores vegetarian, macrobiotic, whole-grain, traditional fermentation and rice alcohol cuisine. She is passionate about promoting local food and runs seminars across the country, including on Junmaishu, food and sake.
