About the brewery : Founded in 1689, Hinomaru Jozo is located in the snowy heart of Akita Prefecture. It uses water from underground wells in the Kurikoma mountain range. Named after the witch hazel flower whose sprouting through the snow signals the imminent arrival of spring, the brewery seeks to embody this spirit in its sake: resistant, robust, yet delicate. Thus, the Mansaku No Hana brand is a session sake that embodies the characteristics of Japanese witch hazel and is loaded with umami with a subtly nuanced aromatic profile.
Detailed tasting notes : The nose reveals citrus aromas, notably lemon and grapefruit. The palate is initially acidic, then slightly bitter with herbaceous flavors, finishing on a pleasantly spicy note.
