A walk in the Nagano forest

香の森 養命酒製造(長野県)
70cl - alc. 47.5% vol.

Detailed tasting notes: Kanomori is very smooth, characterised by an intense flavour and a long finish, literally giving the impression of being in the middle of the forest. The nose is complex and spicy, with distinct notes of herbs and citrus. The palate is powerful and enlivened by very subtle notes of citrus, wild herbs and medicinal notes, imbued with kuromoji. A remarkable complexity that tends towards greater roundness and smoothness afterwards, leading to a lingering finish that is both round and spicy.

Botanical elements used for Kanomori: Kuromoji branches, stems and leaves, juniper berries, rosemary, pine needles, cedar leaves, cinnamon, bay leaves, sage, mulberry, Sichuan pepper, orange peel, angelica, goji berries, ginger, lemon peel, liquorice, aniseed, blackberries, cardamom, gum tree.

About the distillery: Yomeishu Seizo is a name that may not mean anything to you, but it is hugely well known in Japan. Their factory, Yomeishu Komagane, is located in the heart of the Japanese Alps, on a rocky plateau where the air is pure and the water is of excellent quality, very soft because it is slowly filtered through the granite rock of the surrounding mountains. Its history dates back to the early 17th century, specifically 1602, in Nagano Prefecture.
It was on this date that the factory first marketed a medicinal liqueur based on the use of plants, in particular a local shrub called ‘Kuromoji’. The first trademark registered under the Tokugawa Shogunate, Yomeishu liqueur gradually spread its reputation throughout Japan, making Yomeishu Seizo, four centuries later, the undisputed leader in this type of product. Yomeishu medicinal liqueur is made from 14 different plants. It is the flagship product of Yomeshu Seizo, a four-century-old success story with a promise: to improve blood circulation and metabolism.
While Yomeishu's reputation in the field of medicinal liqueurs is well established, it has taken on a formidable challenge: to draw on its expertise in botanical formulation and the use of Kuromoji to undertake the production of spirits. It is only logical that its first products are gins, in line with a very real trend in Japan, as elsewhere. Nevertheless, these are incredibly original, high-quality products that we are delighted to present to you for the first time in France: Kanoshizuku and Kanomori gins.
