About the distillery : The Kaikyo distillery produces two different sets of whiskies: the Yonezawa Family Reserve single malt whiskies are distilled in new copper stills and aged in a selection of oak casks, from imported sherry to local Mizunara oak. Distillation of the signature single malts using the new stills began in 2017.
About the Hatozaki brand : All Hatozaki whiskies are the result of a double blending process: First, the master blender selects the spirit to make up the base blends. These are the whiskies that will later carry the structure and dominant flavour of the final spirit. They are allowed to marry quietly in cask until needed, while being constantly monitored as they continue to mature. Secondly, he takes a proportion of each whisky (a different proportion each time as the flavour and character of the foundation blends continue to develop in barrel) and re-mixes them with other individual whiskies that provide additional florality, depth and finesse to the final blend. After a final period of blending to establish the harmony of the blend, the whisky is bottled. This multi-layered process provides the complexity and balance so prized in blended Japanese whiskies.
