Awamori
This section is dedicated to awamori, Japan's oldest distilled beverage, with a history dating back over 600 years. Awamori has its origins in Southeast Asia, more precisely in the Kingdom of Siam (present-day Thailand). This Okinawan spirit is distilled from long-grain Thai indica rice. The production process comprises two stages: fermentation of the long-grain rice to obtain 18-20% alcohol, followed by simple distillation in a traditional alembic. The fermentation process is highly efficient and gives rise to the name Awamori, which means "big bubbles" in Japanese, in reference to those observed during fermentation.
