About the distillery: Iejima Distillery is a young distillery, having only been in operation since 2011. It is located on Iejima Island, west of the main island of Okinawa. Historically, this is a relatively poor area of Japan as the lack of water in these semi-tropical regions has never allowed rice to be grown. However, sugar cane has been cultivated here since 1630. It is from this local cane that a former Awamori distiller produces Santa Maria rum. The distillery's policy is very clear: to intervene as little as possible in the pre-distillation stages (no refrigeration of the fermentation vats, for example). The idea is that by working as naturally as possible, the soul of Iejima Island will be transferred to the rum, allowing it to travel beyond the island's borders.
