Togouchi Peated Cask Finish is a whisky aged in bourbon casks, then matured in casks previously filled with Islay whisky. It is not chill-filtered, which allows it to express smoky, peaty notes on the mid-palate.

About the Sakurao distillery : Behind this highly original project is Chugoku Jozo, a traditional shochu distillery in the Hiroshima region, in the town of Sakurao in Hatsukaichi to be precise. This brand new craft distillery was created in 2018 with the aim of becoming part of the production of traditional Western distillates. A new unit, but one that has the good fortune to draw on a century-long history of expertise and mastery of distillation techniques. All the ingredients for some very fine things.
About the Togouchi range : The whiskies in the Togouchi range are all aged in a unique location, a 361-metre-long underground cellar buried at the foot of the Osorakan mountain, not far from the Sandankyo valley. It offers ideal conditions for maturing, with a constant temperature of 14°C and a humidity level of 80%. This allows the aromas to be extracted slowly from the casks, which explains the elegance of the Togouchi range and the crystalline hue of the whiskies.
Detailed tasting notes : A whisky aged in bourbon casks, then matured in casks that have previously contained Islay whisky, giving it a unique character. On the nose, this whisky is fruity, with pleasant notes of black tea, chocolate and orange zest. On the palate, the coconut flavours are soft and sweet, in perfect harmony with its slightly smoky, honeyed character. The finish is balanced, peaty and smoky, combining caramelised sugar and lavender.
